Pacific Salmon Chowder

A hearty and comforting chowder made with fresh Pacific salmon, potatoes, and corn.

Ingredients

  • Fresh dill - For garnish
  • Salt and pepper - To taste
  • Heavy cream - 1 cup
  • Pacific salmon - 1 pound, skin removed and cut into chunks
  • Chicken broth - 4 cups
  • Corn - 1 cup, frozen or fresh
  • Potatoes - 2, diced
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the potatoes, corn, and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  4. Add the salmon and cook until it is cooked through, about 5 minutes.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve the chowder hot, garnished with fresh dill.
