Onion and Garlic Roasted Vegetables

This recipe features a delicious combination of roasted onions and garlic with a variety of colorful vegetables.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Dried thyme - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Cherry tomatoes - 1 cup
  • Carrots - 4, sliced
  • Zucchini - 2, sliced
  • Bell peppers - 2, sliced
  • Garlic cloves - 4, minced
  • Red onion - 1, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the sliced red onion, minced garlic, bell peppers, zucchini, carrots, and cherry tomatoes.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, and dried thyme. Toss well to coat.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and sprinkle with fresh parsley before serving.
