Nigerian Curry

This Nigerian curry is a flavorful and aromatic dish made with a blend of spices, vegetables, and protein of your choice.

Ingredients

  • Fresh cilantro - For garnish
  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Coconut milk - 1 cup
  • Carrot - 2, sliced
  • Green bell pepper - 1, diced
  • Red bell pepper - 1, diced
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Chicken - 500 grams, boneless and cut into pieces

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well to coat the chicken with the spices.
  5. Add the diced red and green bell peppers, sliced carrots, and coconut milk. Stir to combine.
  6. Cover the pan and simmer for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro before serving.
  9. Serve the Nigerian curry hot with steamed rice or naan bread.
