These fluffy pancakes are bursting with the sweet and tangy flavors of nectarines and mangoes.
Ingredients
Maple syrup - For serving
Mango - 1, diced
Nectarines - 2, diced
Butter - 2 tablespoons, melted
Milk - 1 cup
Egg - 1
Sugar - 2 tablespoons
Salt - 1/2 teaspoon
Baking powder - 2 teaspoons
All - purpose flour - 1 1/2 cups
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, beat the egg and then add the milk and melted butter. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
Gently fold in the diced nectarines and mango.
Heat a non-stick skillet or griddle over medium heat. Grease with a little butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm with maple syrup and additional diced nectarines and mango on top, if desired.
