Nectarine and Apricot Pancakes

These fluffy pancakes are filled with juicy nectarines and apricots, making them a perfect summer breakfast treat.

Ingredients

  • Maple syrup - For serving
  • Apricots - 2, pitted and diced
  • Nectarines - 2, pitted and diced
  • Unsalted butter - 2 tablespoons, melted
  • Egg - 1
  • Milk - 1 1/4 cups
  • Sugar - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the diced nectarines and apricots.
  5. Heat a non-stick skillet or griddle over medium heat.
  6. Scoop 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the pancakes warm with maple syrup.
