Masitas de Puerco

Masitas de Puerco is a traditional Cuban dish made with tender chunks of marinated pork that are fried until crispy and golden brown.

Ingredients

  • Vegetable oil - 2 cups, for frying
  • Pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Lime juice - 1/4 cup
  • Orange juice - 1/2 cup
  • Garlic - 4 cloves, minced
  • Pork shoulder - 2 pounds, cut into 1-inch cubes

Instructions

  1. In a large bowl, combine the minced garlic, orange juice, lime juice, cumin, oregano, salt, and pepper to make the marinade.
  2. Add the pork cubes to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  3. Heat the vegetable oil in a deep skillet or Dutch oven over medium-high heat.
  4. Remove the marinated pork from the refrigerator and drain off any excess marinade.
  5. Working in batches, carefully add the pork cubes to the hot oil and fry until crispy and golden brown, about 5-7 minutes per batch.
  6. Using a slotted spoon, transfer the fried pork cubes to a paper towel-lined plate to drain excess oil.
  7. Serve the Masitas de Puerco hot as a main course or as a delicious appetizer with a side of rice and beans.
