Mahshi

Mahshi is a traditional Middle Eastern dish made with stuffed vegetables like bell peppers, zucchini, and eggplant. It is typically filled with a flavorful mixture of rice, ground meat, herbs, and spices.

Ingredients

  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Mint - 1/4 cup, chopped
  • Parsley - 1/4 cup, chopped
  • Tomato paste - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1, finely chopped
  • Rice - 1 cup
  • Ground beef - 500 grams
  • Eggplant - 1
  • Zucchini - 2
  • Bell peppers - 6

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Cut the zucchini and eggplant in half lengthwise and scoop out the flesh, leaving a hollow shell.
  3. In a large bowl, combine the ground beef, rice, onion, garlic, tomato paste, parsley, mint, cumin, cinnamon, salt, and pepper. Mix well.
  4. Stuff the bell peppers, zucchini, and eggplant with the meat and rice mixture.
  5. Place the stuffed vegetables in a baking dish. Drizzle with olive oil and pour water into the dish.
  6. Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the filling is cooked through.
  7. Serve hot and enjoy!
