Lemon Pesto

This refreshing lemon pesto is perfect for adding a burst of citrus flavor to your dishes.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Extra virgin olive oil - 1/2 cup
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 tablespoon
  • Garlic - 2 cloves
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Fresh basil leaves - 2 cups

Instructions

  1. In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, garlic, lemon zest, and lemon juice.
  2. Pulse until the ingredients are well combined and finely chopped.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Season with salt and black pepper to taste.
  5. Transfer the lemon pesto to a jar or container and store in the refrigerator.
