Laksa

Laksa is a spicy and aromatic noodle soup popular in Southeast Asia, particularly in Malaysia and Singapore.

Ingredients

  • Lime wedges - 4
  • Hard - boiled eggs - 4, halved
  • Fresh cilantro - 1/4 cup, chopped
  • Bean sprouts - 1 cup
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Laksa paste - 3 tablespoons
  • Chicken broth - 4 cups
  • Coconut milk - 400ml
  • Shrimp - 200g, peeled and deveined
  • Chicken breast - 2, sliced
  • Rice noodles - 200g

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat some oil over medium heat. Add the laksa paste and cook for 2-3 minutes until fragrant.
  3. Add the chicken breast and shrimp to the pot and cook until they are cooked through.
  4. Pour in the coconut milk and chicken broth. Bring to a simmer and let it cook for 10 minutes.
  5. Stir in the fish sauce and lime juice. Taste and adjust the seasoning if needed.
  6. Divide the cooked rice noodles among serving bowls. Ladle the hot laksa broth over the noodles.
  7. Top each bowl with bean sprouts, chopped cilantro, and halved hard-boiled eggs.
  8. Serve the laksa hot with lime wedges on the side.
