Kheer

Kheer is a creamy and delicious Indian rice pudding made with milk, rice, sugar, and flavored with cardamom and saffron.

Ingredients

  • Raisins - 2 tablespoons
  • Pistachios - 2 tablespoons, chopped
  • Almonds - 2 tablespoons, sliced
  • Saffron strands - 1/4 teaspoon
  • Cardamom pods - 4, crushed
  • Sugar - 1/2 cup
  • Milk - 4 cups
  • Basmati rice - 1/4 cup

Instructions

  1. Wash the basmati rice under running water until the water runs clear.
  2. In a large saucepan, bring the milk to a boil over medium heat.
  3. Add the washed rice to the boiling milk and stir well.
  4. Reduce the heat to low and simmer, stirring occasionally, for about 30 minutes or until the rice is cooked and the mixture thickens.
  5. Add sugar, crushed cardamom pods, and saffron strands to the rice mixture. Stir well to combine.
  6. Simmer for an additional 5-10 minutes until the sugar is dissolved and the flavors are well incorporated.
  7. Remove from heat and let the kheer cool to room temperature.
  8. Garnish with sliced almonds, chopped pistachios, and raisins.
  9. Refrigerate for at least 2 hours before serving chilled.
