Kalam Polo Shirazi

Kalam Polo Shirazi is a delicious Persian rice dish made with cabbage, rice, and aromatic spices.

Ingredients

  • Fresh dill - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Water - 4 cups
  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Ground beef - 1 pound
  • Cabbage - 1 small head, shredded
  • Basmati rice - 2 cups

Instructions

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and minced garlic. Sauté until golden brown.
  4. Add the ground beef and cook until browned.
  5. Add the shredded cabbage, turmeric, cumin, salt, and pepper. Stir well to combine.
  6. Drain the soaked rice and add it to the pot. Stir gently to mix with the other ingredients.
  7. Pour in the water and lime juice. Bring to a boil, then reduce the heat to low.
  8. Cover the pot and let it simmer for about 30 minutes, or until the rice is cooked and fluffy.
  9. Remove from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and sprinkle fresh dill on top.
  11. Serve hot and enjoy!
