Irish Boxty Potato Pancakes

These traditional Irish Boxty Potato Pancakes are made with grated potatoes, flour, and buttermilk. They are crispy on the outside and fluffy on the inside.

Ingredients

  • Chives - For garnish
  • Sour cream - For serving
  • Butter - 2 tablespoons, for frying
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1, beaten
  • Buttermilk - 1 cup
  • All - purpose flour - 1 cup
  • Potatoes - 2 large, peeled and grated

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
  2. In a large bowl, combine the grated potatoes, flour, buttermilk, beaten egg, salt, and black pepper. Mix well until a batter forms.
  3. Heat a tablespoon of butter in a large skillet over medium heat.
  4. Drop spoonfuls of the potato batter onto the skillet and flatten them with the back of a spoon to form pancakes.
  5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Repeat with the remaining batter, adding more butter to the skillet as needed.
  7. Serve the Irish Boxty Potato Pancakes hot with sour cream and garnish with chives.
