Ibizan Chicken Stew

A hearty and flavorful chicken stew inspired by the flavors of Ibiza, Spain. This stew is packed with chicken, vegetables, and a rich, savory broth.

Ingredients

  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Chicken broth - 4 cups
  • Potatoes - 2 large, chopped
  • Tomatoes - 2, chopped
  • Red bell pepper - 1, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 large, chopped
  • Chicken thighs - 4, bone-in and skin-on
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
  4. Add the tomatoes, potatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.
  5. Return the chicken to the pot. Reduce the heat to low, cover, and simmer for 45 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Serve the stew hot, garnished with fresh parsley if desired.
