Huevos a La Flamenca

Huevos a la Flamenca is a traditional Spanish dish made with eggs, vegetables, and cured meats.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Peas - 1 cup
  • Tomatoes - 4, diced
  • Chorizo - 150g, sliced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, red bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the chorizo and cook until browned, about 5 minutes.
  4. Add the diced tomatoes, peas, paprika, salt, and pepper. Cook for another 5 minutes.
  5. Make 4 wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are cooked to your liking, about 5-7 minutes for medium eggs.
  7. Sprinkle with fresh parsley before serving.
