Hu Tieu

Hu Tieu is a popular Vietnamese noodle soup dish made with a flavorful broth, rice noodles, and various toppings.

Ingredients

  • Ground black pepper - To taste
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Soy sauce - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Lime - 1, cut into wedges
  • Cilantro - 1/4 cup, chopped
  • Green onions - 1/4 cup, chopped
  • Bean sprouts - 1 cup
  • Chicken breast - 8 oz, thinly sliced
  • Shrimp - 8 oz, peeled and deveined
  • Pork bones - 1 lb
  • Rice noodles - 8 oz

Instructions

  1. In a large pot, add the pork bones and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes to make the broth.
  2. While the broth is simmering, prepare the toppings by cooking the shrimp and chicken breast in a separate pot of boiling water until cooked through. Drain and set aside.
  3. Cook the rice noodles according to package instructions. Drain and set aside.
  4. In a small bowl, mix together the fish sauce, soy sauce, minced garlic, grated ginger, and ground black pepper to make the sauce.
  5. Once the broth is ready, strain it to remove the pork bones. Return the broth to the pot and bring it back to a simmer.
  6. To serve, divide the cooked rice noodles among bowls. Top with shrimp, chicken, bean sprouts, green onions, and cilantro.
  7. Pour the hot broth over the noodles and toppings in each bowl.
  8. Serve hot with lime wedges and the prepared sauce on the side.
