Green Curry Chicken

A spicy, fragrant, and creamy Thai green curry with tender pieces of chicken and colorful vegetables.

Ingredients

  • Lime - 1, juiced
  • Basil leaves - A handful
  • Brown sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Bamboo shoots - 1 can, drained
  • Bell peppers - 2, sliced
  • Vegetable oil - 1 tablespoon
  • Coconut milk - 1 can
  • Green curry paste - 2 tablespoons
  • Chicken breast - 2, cut into bite-sized pieces

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the green curry paste and cook for a minute until fragrant.
  3. Add the chicken pieces and cook until they are no longer pink.
  4. Pour in the coconut milk, fish sauce, and brown sugar. Stir well.
  5. Add the bell peppers and bamboo shoots. Simmer for 10 minutes.
  6. Stir in the basil leaves and lime juice.
  7. Serve the curry hot with steamed rice.
