Gong Bao Chicken with Shiitake Mushrooms

This Chinese classic features tender chicken, shiitake mushrooms, and peanuts in a spicy-sweet sauce.

Ingredients

  • Roasted peanuts - 1/2 cup
  • Green onions - 4, sliced
  • Shiitake mushrooms - 8 ounces, sliced
  • Ginger - 1 tablespoon, minced
  • Garlic - 3 cloves, minced
  • Dried red chili peppers - 4-6, chopped
  • Sesame oil - 1 tablespoon
  • Sugar - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Cornstarch - 2 tablespoons
  • Chicken breast - 1 pound, cut into bite-sized pieces

Instructions

  1. In a bowl, mix together the cornstarch, soy sauce, rice vinegar, sugar, and sesame oil.
  2. Add the chicken and toss to coat. Let marinate for 10 minutes.
  3. Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat.
  4. Add the dried chili peppers, garlic, and ginger. Stir-fry for 30 seconds.
  5. Add the chicken and stir-fry for 2-3 minutes, until browned.
  6. Add the shiitake mushrooms and green onions. Stir-fry for another 2-3 minutes.
  7. Add the peanuts and stir-fry for another minute.
  8. Serve hot with rice.
