Ghanaian Peanut Butter Chicken Curry

This flavorful Ghanaian peanut butter chicken curry is a delicious combination of tender chicken, aromatic spices, and creamy peanut butter.

Ingredients

  • Fresh cilantro - For garnish
  • Salt and pepper - To taste
  • Tomato paste - 2 tablespoons
  • Chicken broth - 1 cup
  • Coconut milk - 1 can (13.5 oz)
  • Peanut butter - 1/2 cup
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Chicken thighs - 1.5 lbs, boneless and skinless

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and grated ginger to the pot and cook for another minute.
  3. Add the chicken thighs to the pot and cook until browned on all sides.
  4. In a small bowl, mix together the curry powder, paprika, cayenne pepper, salt, and pepper. Sprinkle the spice mixture over the chicken and stir well to coat.
  5. Add the peanut butter, coconut milk, chicken broth, and tomato paste to the pot. Stir until well combined.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
  7. Taste and adjust the seasoning if needed.
  8. Serve the Ghanaian peanut butter chicken curry over steamed rice or with naan bread.
  9. Garnish with fresh cilantro before serving.
