Ingredients

  • Cooking oil - 2 tablespoons
  • Thai basil leaves - 1/2 cup
  • Sugar - 1 teaspoon
  • Fish sauce - 2 tablespoons
  • Green beans - 1 cup, trimmed
  • Carrots - 2, sliced
  • Onion - 1, sliced
  • Bell peppers - 2, sliced
  • Coconut milk - 1 cup
  • Red curry paste - 2 tablespoons
  • Chicken breast - 2, boneless and skinless, sliced

Instructions

  1. Heat the cooking oil in a wok or large skillet over medium heat.
  2. Add the red curry paste and stir-fry for 1-2 minutes until fragrant.
  3. Add the chicken slices and cook until they are no longer pink, about 5-6 minutes.
  4. Add the coconut milk and stir well to combine.
  5. Add the bell peppers, onion, carrots, and green beans. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.
  6. Season with fish sauce and sugar. Stir well to coat the chicken and vegetables with the sauce.
  7. Add the Thai basil leaves and stir-fry for another minute.
  8. Remove from heat and serve hot with steamed rice.
