Fava Bean Falafel

These crispy and flavorful fava bean falafels are a delicious twist on the classic chickpea falafels.

Ingredients

  • Vegetable oil - For frying
  • All - purpose flour - 1/4 cup
  • Baking powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Fresh cilantro - 1/2 cup, chopped
  • Fresh parsley - 1/2 cup, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Dried fava beans - 1 cup, soaked overnight

Instructions

  1. Drain and rinse the soaked fava beans.
  2. In a food processor, combine the fava beans, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking powder. Pulse until well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the all-purpose flour. Mix well.
  4. Shape the mixture into small patties or balls, about 1 inch in diameter.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Fry the falafels in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove from the pan and place on a paper towel-lined plate to drain excess oil.
  8. Serve the fava bean falafels hot with tahini sauce, pita bread, and your favorite toppings.
