Falafel Pita Sandwich

This delicious falafel pita sandwich is packed with flavorful falafel balls, fresh vegetables, and creamy tahini sauce.

Ingredients

  • Tahini sauce - 1/4 cup
  • Lettuce - A handful
  • Cucumber - 1/2, sliced
  • Tomato - 1, sliced
  • Pita bread - 2 rounds
  • Vegetable oil - For frying
  • All - purpose flour - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, chopped
  • Dried chickpeas - 1 cup

Instructions

  1. Soak the dried chickpeas in water overnight. Drain and rinse well.
  2. In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, black pepper, baking powder, and all-purpose flour. Pulse until well combined and the mixture holds together.
  3. Transfer the falafel mixture to a bowl and refrigerate for 1 hour to firm up.
  4. Heat vegetable oil in a deep pan or skillet over medium heat.
  5. Shape the falafel mixture into small balls and carefully drop them into the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove from the oil and drain on a paper towel-lined plate.
  6. Warm the pita bread rounds in a toaster or oven.
  7. Cut the pita bread in half and open the pocket.
  8. Stuff each pita half with falafel balls, sliced tomato, cucumber, lettuce, and drizzle with tahini sauce.
  9. Serve the falafel pita sandwiches immediately and enjoy!
