Devonshire Cream Tea

A traditional English treat, Devonshire cream tea is a delightful combination of scones, clotted cream, and strawberry jam, served with a pot of tea.

Ingredients

  • Boiling water - 1 liter
  • Tea bags - 4
  • Strawberry jam - 1 pot
  • Clotted cream - 1 pot
  • Milk - 150ml
  • Sugar - 40g
  • Butter - 75g, cold
  • Self - raising flour - 225g

Instructions

  1. Preheat the oven to 220°C (200°C fan) mark 7.
  2. Put the flour into a large bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
  3. Stir in the sugar, then quickly stir in the milk to get a soft dough.
  4. Turn out onto a lightly floured work surface, knead lightly and roll out to a 2cm (3⁄4in) thickness. Cut out rounds using a 5.5cm (21⁄4in) cutter.
  5. Place on a baking sheet and bake for 10-12min until risen and golden.
  6. Meanwhile, make the tea by placing the tea bags in a teapot and pouring over the boiling water. Leave to brew for 2-3min.
  7. Serve the warm scones with the clotted cream and strawberry jam, along with the pot of tea.
