Creamy Wild Mushroom Soup

A rich and creamy soup made with a variety of wild mushrooms. Perfect for a cold day.

Ingredients

  • Salt and pepper - To taste
  • Heavy cream - 1 cup
  • Chicken or vegetable broth - 4 cups
  • Flour - 2 tablespoons
  • Thyme - 1 teaspoon, fresh
  • Mixed wild mushrooms - 500 grams, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Butter - 2 tablespoons

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the mushrooms and thyme and cook until the mushrooms are soft, about 10 minutes.
  4. Sprinkle the flour over the mushrooms and stir to combine.
  5. Slowly add the broth, stirring constantly to prevent lumps.
  6. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve the soup hot, garnished with fresh thyme if desired.
