Crab Bisque

This creamy and flavorful crab bisque is made with fresh crab meat, vegetables, and a touch of sherry.

Ingredients

  • Fresh parsley - For garnish
  • Salt and pepper - To taste
  • Paprika - 1/2 teaspoon
  • Sherry - 2 tablespoons
  • Crab meat - 1 pound, cooked and shredded
  • Heavy cream - 1 cup
  • Chicken broth - 4 cups
  • All - purpose flour - 1/4 cup
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, finely chopped
  • Celery - 2 stalks, finely chopped
  • Onion - 1 medium, finely chopped
  • Butter - 4 tablespoons

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion, celery, carrot, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir to coat.
  4. Gradually pour in the chicken broth, stirring constantly to prevent lumps.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  6. Using an immersion blender or a regular blender, puree the soup until smooth.
  7. Return the soup to the pot and stir in the heavy cream, crab meat, sherry, paprika, salt, and pepper.
  8. Simmer for another 10 minutes, until heated through.
  9. Serve hot, garnished with fresh parsley.
