Coq au Vin Jaune is a traditional French dish where chicken is cooked with wine, mushrooms, and onions. The dish gets its name from the Vin Jaune wine used in the recipe.

Ingredients

  • Flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Salt and pepper - To taste
  • Bay leaf - 1
  • Thyme - 1 teaspoon
  • Chicken broth - 2 cups
  • Mushrooms - 1 cup, sliced
  • Garlic - 2 cloves, minced
  • Onions - 2, chopped
  • Vin jaune wine - 2 cups
  • Chicken - 1 whole, cut into pieces

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the butter in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides.
  3. Remove the chicken from the pot and set aside.
  4. In the same pot, add the onions, garlic, and mushrooms. Cook until the onions are soft and golden.
  5. Add the flour to the pot and stir to coat the onions and mushrooms.
  6. Slowly add the Vin Jaune wine, stirring constantly to prevent lumps.
  7. Add the chicken broth, thyme, and bay leaf. Bring to a boil.
  8. Return the chicken to the pot. Reduce the heat to low, cover, and simmer for 2 hours.
  9. Remove the bay leaf before serving.
