Classic Beef Stew

A hearty, warming dish of beef stew, perfect for cold winter nights.

Ingredients

  • Thyme - 1 teaspoon
  • Bay leaf - 1
  • Worcestershire sauce - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Beef broth - 4 cups
  • Potatoes - 3 large, peeled and chopped
  • Carrots - 3, peeled and chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 large, chopped
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Stewing beef - 1.5 pounds

Instructions

  1. Season the beef with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the carrots and potatoes and cook for a few more minutes.
  5. Return the beef to the pot. Add the beef broth, tomato paste, Worcestershire sauce, bay leaf, and thyme.
  6. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
  7. Remove the bay leaf before serving.
