Chicken Street Tacos

These flavorful chicken street tacos are made with marinated grilled chicken, fresh toppings, and a tangy salsa.

Ingredients

  • Lime wedges - For serving
  • Salsa - 1/2 cup
  • Onion - 1/4 cup, diced
  • Cilantro - 1/4 cup, chopped
  • Corn tortillas - 8
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Chicken breasts - 2, boneless and skinless

Instructions

  1. In a bowl, combine the lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper to make the marinade.
  2. Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for about 6-8 minutes per side, or until cooked through and nicely charred. Remove from the grill and let it rest for a few minutes.
  6. Slice the grilled chicken into thin strips.
  7. Warm the corn tortillas on the grill or in a dry skillet.
  8. Fill each tortilla with the sliced chicken, diced onion, chopped cilantro, and a spoonful of salsa.
  9. Serve the chicken street tacos with lime wedges on the side.
