This creamy and flavorful carrot and celery soup is a healthy and comforting dish.
Ingredients
Olive oil - 2 tablespoons
Salt and pepper - To taste
Fresh thyme - 1 teaspoon
Coconut milk - 1 cup
Vegetable broth - 4 cups
Garlic - 2 cloves, minced
Onion - 1 medium, chopped
Celery - 4 stalks, chopped
Carrots - 4 large, peeled and chopped
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
Add the carrots, celery, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
Using an immersion blender or regular blender, puree the soup until smooth.
Return the soup to the pot and stir in the coconut milk. Heat over low heat until warmed through.
