Carrot and Celery Soup

This creamy and flavorful carrot and celery soup is a healthy and comforting dish.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Fresh thyme - 1 teaspoon
  • Coconut milk - 1 cup
  • Vegetable broth - 4 cups
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Celery - 4 stalks, chopped
  • Carrots - 4 large, peeled and chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the carrots, celery, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
  4. Using an immersion blender or regular blender, puree the soup until smooth.
  5. Return the soup to the pot and stir in the coconut milk. Heat over low heat until warmed through.
  6. Taste and adjust the seasoning if needed.
  7. Serve hot and enjoy!
