Caribbean Goat Curry

This flavorful Caribbean goat curry is made with tender goat meat, aromatic spices, and coconut milk.

Ingredients

  • Fresh cilantro - For garnish
  • Salt and pepper - To taste
  • Lime juice - 2 tablespoons
  • Chicken broth - 1 cup
  • Coconut milk - 1 can (14 oz)
  • Potatoes - 2, peeled and diced
  • Bell pepper - 1, chopped
  • Onion - 1 large, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 4 cloves, minced
  • Cayenne pepper - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Goat meat - 2 pounds, cut into cubes

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the goat meat and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion, bell pepper, garlic, and ginger. Cook until the onion is translucent.
  4. Add the curry powder, turmeric, cumin, coriander, and cayenne pepper. Stir well to coat the vegetables with the spices.
  5. Return the goat meat to the pot and stir to combine with the spices and vegetables.
  6. Add the diced potatoes, coconut milk, and chicken broth. Season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the goat meat is tender.
  8. Stir in the lime juice and adjust the seasoning if needed.
  9. Serve the Caribbean goat curry hot, garnished with fresh cilantro. Enjoy!
