Brodetto Di Pesce

Brodetto di Pesce is a traditional Italian fish stew made with a variety of seafood and served with crusty bread.

Ingredients

  • Crusty bread - For serving
  • Salt and pepper - To taste
  • Fresh parsley - 1/4 cup, chopped
  • Mixed seafood (such as shrimp, mussels, clams, calamari) - 1.5 lbs
  • Fish stock - 4 cups
  • White wine - 1 cup
  • Tomatoes - 4 large, diced
  • Onion - 1 large, chopped
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the garlic and onion, and cook until softened, about 5 minutes.
  3. Add the diced tomatoes and cook for another 5 minutes.
  4. Pour in the white wine and let it simmer for 2-3 minutes to cook off the alcohol.
  5. Add the fish stock and bring to a boil.
  6. Reduce the heat to low and let the broth simmer for 15 minutes to develop the flavors.
  7. Add the mixed seafood to the pot and cook until they are cooked through and tender, about 5-7 minutes.
  8. Season with salt and pepper to taste.
  9. Sprinkle with fresh parsley.
  10. Serve the Brodetto di Pesce hot with crusty bread for dipping.
