Broccoli Chowder

This creamy and comforting broccoli chowder is packed with nutritious broccoli florets and hearty potatoes.

Ingredients

  • Green onions - 2 tablespoons, chopped
  • Cheddar cheese - 1 cup, shredded
  • Salt and pepper - To taste
  • All - purpose flour - 2 tablespoons
  • Milk - 1 cup
  • Vegetable broth - 4 cups
  • Broccoli - 4 cups, florets
  • Potatoes - 2 medium, peeled and diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Butter - 2 tablespoons

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the diced potatoes and broccoli florets to the pot. Stir to combine.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. In a separate bowl, whisk together the milk and all-purpose flour until smooth.
  6. Slowly pour the milk mixture into the pot, stirring constantly. Cook for an additional 5 minutes, or until the chowder has thickened.
  7. Season with salt and pepper to taste.
  8. Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
  9. Serve the broccoli chowder hot, garnished with chopped green onions.
