Blueberry Scones

These delicious blueberry scones are perfect for a breakfast treat or afternoon snack. They're packed with juicy blueberries and topped with a sweet glaze.

Ingredients

  • Lemon juice - 2 tablespoons, for glaze
  • Powdered sugar - 1/2 cup, for glaze
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Whole milk - 1/2 cup
  • Fresh blueberries - 1 cup
  • Unsalted butter - 1/2 cup, cold and cubed
  • Salt - 1/2 teaspoon
  • Baking powder - 1 tablespoon
  • Granulated sugar - 1/3 cup
  • All - purpose flour - 2 cups

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter and use your fingers to work it into the flour until the mixture resembles coarse crumbs.
  4. Stir in the blueberries.
  5. In a separate bowl, whisk together the milk, egg, and vanilla extract. Gradually add this to the flour mixture, stirring until just combined.
  6. Turn the dough out onto a floured surface and knead it a few times to bring it together.
  7. Pat the dough into a round disc, about 1-inch thick, and cut it into 8 wedges.
  8. Place the scones onto a baking sheet and bake for about 20-25 minutes, or until golden brown.
  9. While the scones are baking, make the glaze by whisking together the powdered sugar and lemon juice.
  10. Once the scones have cooled slightly, drizzle them with the glaze.
