Black Eye

This refreshing black eyed pea salad is packed with flavors and makes a perfect side dish or light meal.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/2, finely chopped
  • Cucumber - 1, diced
  • Red bell pepper - 1, diced
  • Black eyed peas - 2 cans, drained and rinsed

Instructions

  1. In a large bowl, combine the black eyed peas, red bell pepper, cucumber, red onion, cherry tomatoes, parsley, and mint.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve chilled and enjoy!
