Black Bean Veggie Burger

A hearty and flavorful vegetarian burger made with black beans and a variety of vegetables.

Ingredients

  • Lettuce, tomato, and other burger toppings - As desired
  • Burger buns - 4
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Bread crumbs - 1/2 cup
  • Egg - 1
  • Garlic - 2 cloves, minced
  • Onion - 1/2, finely chopped
  • Red bell pepper - 1, finely chopped
  • Black beans - 1 can, drained and rinsed

Instructions

  1. In a medium bowl, mash the black beans with a fork until thick and pasty.
  2. In a food processor, finely chop bell pepper, onion, and garlic, then add them to the mashed beans.
  3. Stir in the egg, bread crumbs, chili powder, cumin, and salt and pepper. Mix well.
  4. Divide mixture into four patties.
  5. In a large skillet, heat the olive oil over medium heat. Add the patties and cook for about 5 minutes on each side, until browned and heated through.
  6. Serve the burgers on the buns with lettuce, tomato, and your favorite burger toppings.
