Apricot Cobbler Custard

This delicious apricot cobbler custard combines the sweetness of apricots with a creamy custard and a buttery cobbler topping.

Ingredients

  • Unsalted butter - 1/2 cup, melted
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Sugar - 1/2 cup
  • All - purpose flour - 1 cup
  • Eggs - 2
  • Milk - 1 cup
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1/2 cup
  • Apricots - 4 cups, pitted and halved

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the apricots, sugar, cornstarch, and vanilla extract. Mix well to coat the apricots.
  3. In a separate bowl, whisk together the milk and eggs until well combined.
  4. In another bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  5. Pour the melted butter into a 9x9-inch baking dish.
  6. Spread the apricot mixture evenly over the melted butter.
  7. Pour the milk and egg mixture over the apricots.
  8. Sprinkle the flour mixture evenly over the top.
  9. Bake for 35-40 minutes, or until the cobbler topping is golden brown and the custard is set.
  10. Allow to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream, if desired.
