Albondigas en Salsa is a traditional Mexican dish made with flavorful meatballs in a rich tomato sauce.

Ingredients

  • Salt and pepper - To taste
  • Bay leaf - 1
  • Cumin - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Chicken broth - 2 cups
  • Tomato sauce - 2 cups
  • Olive oil - 2 tablespoons
  • Pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Egg - 1
  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, finely chopped
  • Bread crumbs - 1/2 cup
  • Ground beef - 1 pound

Instructions

  1. In a large bowl, combine the ground beef, bread crumbs, onion, garlic, egg, cilantro, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the tomato sauce, chicken broth, dried oregano, cumin, bay leaf, salt, and pepper. Stir well to combine.
  5. Bring the sauce to a simmer and return the meatballs to the skillet. Cover and cook for 30 minutes, or until the meatballs are cooked through and the sauce has thickened.
  6. Serve the Albondigas en Salsa hot, garnished with fresh cilantro. Enjoy!
