al Bap

Al Bap is a Korean dish made with seasoned vegetables and rice, topped with a fried egg.

Ingredients

  • Green onions - 2 tablespoons, chopped, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Eggs - 2
  • Black pepper - To taste
  • Salt - To taste
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Spinach - 2 cups
  • Bell pepper - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Carrots - 1 medium, julienned
  • Cooked rice - 2 cups

Instructions

  1. In a large skillet, heat the sesame oil over medium heat.
  2. Add the carrots, zucchini, and bell pepper. Cook for 5 minutes, until slightly softened.
  3. Add the spinach and garlic. Cook for another 2 minutes, until the spinach wilts.
  4. Add the cooked rice to the skillet and stir to combine with the vegetables.
  5. Add the soy sauce, salt, and black pepper. Stir well to coat the rice and vegetables.
  6. In a separate non-stick skillet, fry the eggs to your desired doneness.
  7. Divide the rice and vegetable mixture into bowls. Top each bowl with a fried egg.
  8. Garnish with sesame seeds and chopped green onions.
  9. Serve hot and enjoy!
